  2. Prepare 1 bowl basmati rice
  3. Take 1 1/2 bowl of water

  7. Make ready 2 tbsp melon seeds
  8. Make ready 10-15 raisins
  9. Get 8-10 pistachio

Wash peel and grate carrots and coconut. Pick, clean and wash the rice. Roughly chop the carrots and boil them in a deep-bottomed pan over medium flame till they are tender. Once boiled, drain the excess water and keep aside.

Instructions to make Jaggery and carrot rice:
  1. Wash and Soak rice in water for 10 minutes. Add rice and water in Pressure cooker and cook till 2 whistles and release the pressure.
  2. Peel wash and grate carrots. Collect all ingredients. Chop jaggery in small pieces.
  3. Heat ghee in a wok. Add grated carrots and cook for 2 minutes. Add jaggery and cook on low flame till jaggery melts.
  4. Add melon seeds, raisins, pistachio, dessicated coconut and toss well. Add rice and mix. Cover the lid and cook for 2 minutes. Again stir it well and switch off the flame.
  5. Serve hot garnished with raisins as dessert.
