Bengali garam masala is a combination of cloves, green cardamom and cinnamon in equal measures. There is no need to roast the spices. Kalia is a spicy fish curry loved for its superb taste. Large and mature Carp or Hilsa fish should be selected for this preparation as the fat and oil from such fishes add to the taste.

Steps to make Fish Kalia:
  1. To start with, wash the fish well and marinate with 1/2 tsp turmeric powder and salt. Keep aside for 20 minutes.
  2. Heat a nonstick frying pan with 2 tbsp oil. Spread it evenly. Gently place the fish pieces and shallow fry them from both sides until golden brown on a low medium heat.
  3. In another pan heat remaining oil. Add in 1 tsp sugar. When sugar starts to caramelize, add chopped onion. Fry onion till brown. Add red chilli powder, turmeric powder and saute for few seconds. Add onion paste, ginger garlic paste, cumin powder, coriander powder and saute for a while. Add chopped tomato, coriander leaves and salt. Cook till tomato is soft and mushy.
  4. Next add the whipped curd and mix well. Cook for a couple of minutes until oil separates from the mixture.
  5. Now add potatoes and saute for a minute or two. Then add one and half cup of water, cover and cook for 4-5 minutes.
  6. Then add the fried fish pieces and cook covered for 5-7 minutes on a medium flame till the curry reaches a desired consistency.
  7. Finally add the garam masala powder and few chopped coriander leaves. Cover and turn off the flame.
  8. Serve Fish Kalia hot with steamed or plain rice.
