Curd rice also called yogurt rice, is a dish originating from India. The word "curd" in Indian English refers to unsweetened probiotic yogurt. It is most popular in the South Indian states of Maharashtra, Tamil Nadu, Karnataka, Telangana and Andhra Pradesh. In the state of Tamil Nadu it is called thayir saadam, and in Telangana and Andhra Pradesh it is called perugannam/daddojanam.

The ingredients needed to make Curd Rice:
  1. Get 2 cups cooked rice
  2. Make ready 2 cups curds
  3. Get as per taste salt
  4. Get 2 tsp oil
  5. Take 1/2 tsp mustard seeds
  6. Make ready 1/2 tsp black gram
  7. Make ready 10-12 curry leaves
  8. Make ready 2 green chillies chopped
  9. Take 2 tbsp grated carrot
  10. Make ready 1/4 cup thick milk

Curd rice is quintessential comfort food! Although the word "curd" in India often refers to unsweetened yogurt, this dish of South Indian origin is actually cooked rice which is seasoned and then combined with yogurt. DIRECTIONS Cook rice and keep aside. Add salt and sugar and keep aside.

Steps to make Curd Rice:
  1. Firstly cook the rice little more softer than usual, you can also use left over rice for this, now beat the curd to smooth consistency,add curd, milk, salt, grated carrot to the rice and mix well, adjust curds according to your taste
  2. For tempering/tadka, heat up two tsp of oil in a sauce pan, add mustard seeds, when it starts to splutter add black gram, chopped green chillies, and curry leaves saute for two minutes
  3. Add little tempering/tadka to the curd mixed rice bowl mix well and transfer that to serving bowl/plate, garnish with left over tadka and few carrot flowers,green chillies,and few rose petals or you can garnish according to your taste and serve with pickle… 😋

DIRECTIONS Cook rice and keep aside. Add salt and sugar and keep aside. Curd rice is a popular and tasty South Indian dish that is served with a South Indian thali or meal. Curd rice is nothing but curd (yogurt) mixed with cooked rice, herbs and then tempered. Curd rice is also known as thayir sadam or daddojanam or bagala bath in some South Indian languages.
