  8. Get 2 cloves

  12. Prepare 1 tsp cumin powder
  13. Get 1/2 tsp red chili powder

  16. Get 2 dry red chillies
  17. Make ready 100 gm yoghurt
  18. Prepare Salt to taste

This Mutton curry is a celebrated Marwari royal delicacy made with indigenous Mathania Red Chillies from an ancient village in Rajasthan called Mathania. It is usually eaten along with unleavened (which means without yeast) breads made with locally available millets like Jowar and Bajra during the winter months. Laal Maans is a hot and spicy meat curry from Rajasthan. Traditionally, laal maans was made with wild game meat, specially the dish was cooked after the hunt using dried mathania red chillies,whole spices and kachari.

Steps to make Rajasthani Laal Maans Curry (Rajasthani Royal Mutton curry):
  1. Soak the Mathania red chillies and dry red chillies in a water for overnight. make a smooth paste adding with 2 tbsp water and keep it aside.
  2. In a mixing bowl add Mutton, ginger garlic paste and marinate well and keep it aside for 2 hrs.
  3. In a large pot heat ghee and add pepper corn cloves green cardamom black cardamom and saute well.
  4. Add onion and saute till translucent. Add the marinated Mutton and cook for 4-5 minutes.
  5. Add Mathania chili paste and cook for 5-10 minutes stirring continuously till to remove chillies rawness. Add salt mix well. Cover it for 5-7 minutes.
  6. In a bowl add yoghurt, coriander powder, cumin powder, red chili powder and mustard oil and mix well and make a paste.
  7. Reduce the flame to low and add the yoghurt mixture paste. Mix well and cook for 4-5 minutes. Stirring continuously. Let it cook till oil separates.
  8. Add 1/2 cup warm water and cover it. Let it cook for around 30- 40 minutes on low flame or until Mutton becomes tender. Switch off the flame.
  9. Serve with Roti and paratha.
