The drippings from your roast turkey are the base for this gravy. If you do not have enough turkey fat after straining your drippings, add melted butter to make up the difference.

The ingredients needed to make Turkey Gravy:
  1. Take Turkey gizzards, turkey neck, popes nose, turkey drippings, one coarsely chopped onion, 1/2 cup celery leaves, salt, pepper, garlic to taste and two tsps of chicken powder
  2. Get 8 cups water

We get it - you spent hours preparing your feast, but it simply won't be complete without Grandma's heirloom gravy boat brimming with rich, creamy gravy. Bring the turkey stock to a boil in a large saucepan. Stir in soup, and season with poultry seasoning, pepper, seasoned salt, and garlic powder. Reduce heat to low, and let simmer.

Instructions to make Turkey Gravy:
  1. Combine all ingredients in a pot, bring to a boil. Turn down heat and simmer for 4 hours adding more water / seasoning if needed. After 4 hours add the turkey juice from the roast pan you cooked the turkey in.
  2. Remove from heat, use a large strainer and strain all the liquid from the gizzard pot into a clean pot. This will leave you with a clear liquid broth. Season if necessary. Bring to a boil and thicken with a corn starch slurry.

Stir in soup, and season with poultry seasoning, pepper, seasoned salt, and garlic powder. Reduce heat to low, and let simmer. Melt butter in a medium saucepan over medium heat. This will be used as the base of the gravy; you'll be adding thickened turkey drippings (roux) for your final gravy. Slowly, the gravy will begin to thicken.
