Preheat a large saucepan over a medium heat and add the olive oil. When the pan is hot add the onions, mushrooms, leek, celery, carrot, garlic & salt & pepper. This vegan gravy has been making us very happy! It's super easy to make and absolutely divine poured on top of some vegan mashed potatoes!

Instructions to make Vegan gravy:
  1. Slice all the veg very thinly. You can use a knife but preferably use a mandolin or a food processor to achieve the thin slices.
  2. Mix the veg in a roasting tin with the tomato paste and a little oil. Roast at 150 degrees Celsius for 45 minutes to 1 hour until the veg is browned
  3. Add the wine and 1ltr water to the veg and return to the oven for 1 hour.
  4. Strain the liquid from the veg into a pan. Simmer until the liquid has halved in volume.
  5. Add cornflour to thicken, and plenty of salt to taste. Serve with your roast!
